As Dimitris says, "industry" here would refer to the whole business of baking and not to an individual establishment. I suggest "bakery and patisserie" as a translation of the whole phrase.

: Surely 'viotexnia'=craft(manship) and 'artopoia'= breadmaking. Breadmaking in England is a big 'Industry' THE BREAD INDUSTRY and 'Baking' refers more to 'Patisserie'. Where they make bread, of-course is a bakery BUT 'GENERALISED' FOR ALL DOUGH PRODUCTS

'Industry' is the TOTAL engagement NOT ' a branch' of anything manufactured, made.... You talk of the 'SHIPPING', 'STEEL', 'MINING' Industries etc.. That is the TOTAL ENGAGEMENT IN THAT INDUSTRY. Not a 'part' or 'branch' of it.

Discussion
Baking = cooking something in the oven (roasting also means that, but let's not get into the difference right now).
So bread is baked (as are some other things), and in particular, somebody who produces bread professionally is called a baker. The place where they do it is a bakery.
If you consider all the large commercial bread makers together, like Hovis, etc., then collectively you could refer to them as the bread-making industry or baking industry. However, that doesn't appear to be the meaning here.
Sweet cakes, tarts, buns, scones, etc., are made in a patisserie, or pastry shop. Those things are also baked, but if you say the word "bakery" to a native English speaker, they'll think of bread, not pastries.
