Spanish term

Azúcares finales - azúcares medios

Spanish to English Science Biology (-tech,-chem,micro-) Biotechnology
Hi all,

I am translating documentation two phrases that I cannot seem to get my head around.

With regards to azúcares finales would the correct translation be end sugars or fermentable sugar?

I have no translation for azúcares medios.

(Both are related to oenology and the sugars you find in the fermentation process of the grape to produce wine)

Thanks in advance and kind regards,

Chiara
Proposed translations (English)
1 Final sugars - medium sugars

Discussion

Joe Lujan Sep 10, 2012:
I think its about the final sweetness degree of the wine if they are taking about the taste
Chiara Torres (asker) Aug 29, 2012:
as Neil and Charles have suggested the client has explained that Final sugars are the residual sugars in wine after fermentation and mid-sugars are glucose + fructose during the fermentation process.
Chiara Torres (asker) Aug 29, 2012:
Test para determinar azúcares finales.
Test para determinar azúcares medios.

That is the whole sentence Liz. Sorry to have wasted your time. However I need to understand what azúcares finales and what azúcares medios are.

Once again: kindly provide all context in Spanish, i.e. the entire sentence where each of your terms appears. Also, kindly post each term separately. Otherwise it is like looking for a needle in a haystack, and wastes answerers' time and efforts. Cheers!
Chiara Torres (asker) Aug 29, 2012:
Thank you Charles (as per usual a great help).
Charles Davis Aug 29, 2012:
@ Chiara I'm fairly sure the "azúcares finales" are the sugars left in the wine at the end of fermentation, which I believe are usually called residual sugars. But I've no idea what "azúcares medios" might be.

Final sugars - medium sugars

Or "residual sugars - medium sugars". I'd ask the client to verify it if possible, since I am guessing.
The decision to harvest grapes is typically made by the winemaker and informed by the level of sugar (called °Brix), acid (TA or Titratable Acidity as expressed by tartaric acid equivalents) and pH of the grapes. "Final" or residual sugars would be from the end of the ripening process and medium or mid-sugars would be from halfway through.

As liz notes, we really need to know what they are referring to specifically (the grape per se, or part of the winemaking process) - which would mean asking the client or author.

It could also refer to the "cata" o tasting, since people are least sensitive to the taste of sweetness (in contrast to sensitivity to bitterness or sourness) with the majority of the population being able to detect sugar or "sweetness" in wines between 1% and 2.5% residual (or "final") sugar.

NB: IMO, "medios" could also mean "average" as in "average sugar content" (contenido medio en azucar)...
Need more info.
