that's what you say about chicken! At least you go to the supermarket and that's what you see!

Well, I found different names deppending on the type of cut:

Breast Quarters: Halves may be further cut into which include the wing. A breast quarter, including portions of the back, is all white meat.

Split Breast: A breast quarter with the wing removed.

Split Breast without Back: A breast quarter with wing and back portion removed.

And there are more....can't you give us a context???

In general, I think you can use breast

This is from a list of BEEF cuts...that's all the context I have. I have never heard of "beef breast" - does this really exist? We're not talking about chickens here, as I already noted above.

rack of ribs

Could the particular cut your have in mind be this?

"The term ribs usually refers to the less meaty part of the chops, often cooked as a slab (not cut into separate ribs)." [this is from Wikipedia - see link below]

If you try "rack of ribs" in "" on google you will find it is used in many recipes. As my partner pointed out, on a cow's breast there isn't all that much meat... Brisket is usually a cheap cut of meat, by the way.
