Heat Transfer Model for Perfect Mixing. For forced convection (agitated liquids), it is possible to assume that temperature inside the can is uniformly distributed but time dependent. In the case of process temperature (TRT), three steps are encountered during the process, as follow: a) firstly, a slow comes up, b) holding constant temperature (TRT), and c) cooling down (Tw), normally at a constant temperature. Two dimensionless temperature ratio can be deduced from the heat transfer model (Chapter 2, equations 2.89 and 2.94), for perfect mixing one for slow come up (equation 6.6), and one for constant process temperature (equation 6.7)
