"encalhada" is a slang in Brazil for a woman that can't get married, even though she is trying hard.

Is there any term and/or slang for this in English?

'on the shelf' is bog standard in the UK, I'm amazed it's not known in the US! But I think a translation like 'desperate' might be better here, because otherwise the expression is going to be the same as the one for 'titia' in the other question.
