neutral Barbara Cochran, MFA : I doubt if a child reading this book would have any clue about what the word "matriarch" means./I don't it. The trend in "education" nowadays is to dumb down the impressionable minds of young children so they'll become good little neo-Marxists.

That's what I said in the first line of my explanation, but perhaps you didn't read it. Also, the language is quite advanced, and part of the point of stories is to teach kids new words.

queen cow

Seems like the correct term is lead steer or herd leader, but for a children's book I would say "queen cow" or "cow in chief" has a nice ring to it. Top cow as in top dog may also work. Here are some more options:
top cow / cow in chief / lead steer / herd leader
